Christmas is practically upon us, but in case you do have a few hours spare over the weekend, I have a perfectly easy Christmas bake for you! I was inspired by a bake from Little Sunny Kitchen and although my cheery snowmen are by no means perfect, they nonetheless tasted great and brought a smile to lots of faces! It’s perfect to do with small children, as the recipe is simple and not too time consuming and I’m sure they could be brought even more to life with some hats or scarves to keep them warm! Already looking forward to giving these another go so I’ve included all the recipe details below!
FOR THE CAKE (makes 9 large cupcakes)
- 110g/4oz butter or margarine, softened at room temperature
- 110g/4oz caster sugar
- 2 free-range eggs, lightly beaten
- 1 tsp vanilla extract
- 110g/4oz self-raising flour
- 1-2 tbsp milk
- Cupcake Cases
FOR THE DECORATION
- 225g (8oz) icing sugar
- 2-3tbsp boiling water
- 9 white marshmallows
- black writing icing
- colourful chocolate beans (or something similar)
- jelly diamonds
I started with a basic cupcake recipe, which you can find here. Once the cupcakes have cooled, mix together the icing sugar and boiling water and apply using a palette knife to the tops of a cupcake. Next, push a marshmallow into the icing to form the snowman’s head. You are now ready to ice the face and secure the buttons (colourful chocolate beans) using a bit more of the icing. To create the nose, cut an orange jelly diamond into quarters and secure with icing.
