Dulce de Leche Recipe

Dulce de Leche is a beautifully sweet, creamy caramel flavour spread/sauce that makes the perfect addition to a bowl of ice cream. It’s also really simple to make and a great gift at Christmastime. Just pick a couple of pretty jars, fill with this gorgeous sauce and adorn with some pretty ribbon for that perfectly understated look.

200g Butter
200g Soft Light Brown Sugar
Seeds of 1 Vanilla Pod
100g Golden Syrup
400ml Double Cream


  1. Melt all of the ingredients apart from the double cream in a saucepan.
  2. Stir until the sugar has dissolved.
  3. Once dissolved, add the double cream and bring to the boil.
  4. Simmer until thickened (about 15-20 minutes).
  5. Pour into sterilised jars and allow to cool.

I just love this as a dessert topping around Christmastime. I have to say, I don’t know if there’s anything particularly Christmassy about it really, apart from being delicious – but that’s good enough for me. The best thing about it is how versatile Dulce de Leche is, as it works both as both a spread when cool and a sauce once warmed up slightly. On top of ice cream, Dulce de Leche makes an amazing addition to a whole host of desserts such as pavlovas, waffles and cheesecakes. Just typing up this blog post is tempting me to run downstairs with a spoon and start eating it from the jar!
